Cholay puri


                               FOR   PURI

INGREDIENTS

1/2 cup suji ( semolina )

1/2 cup maida ( purpose flour )

Salt as per taste

Water for kneading dough

Oil

METHOD

1) Mix meida, suji and salt.

2) knead a smooth dough

3) leave it for 15 min

4) take a pan. Pour oil in it.

5) make small balls of dough,  roll it and deep fry it.

                  FOR CHOLAY ( CHICKPEAS )


INGREDIENTS

2 bowls of boiled cholay ( chickpeas )

4 tomatoes

2 tbsp besan 

1 tsp cumin seeds 

1 tsp turmeric powder

1 tsp amchoor 

1 green chili 

Red chili powder as per taste 

Salt as per taste 

Oil

Water

METHOD 

1) take a pan. Pour some oil in it. Put cumin seeds.  After few seconds add besan, stir it till it changes the colour and a nice aroma comes out.

2) add cholay and 2 glasses of water 

3) make a paste of tomatoes. 

4) put this paste on the cholay 

5) add all dry masalas  ( salt, chilies,  amchoor,  turmeric. )

6) cover the lid for 20 or 30 min. 

7) check it if it's cooked completely so switch off the flame.

8) garnish it with chat masala and fresh coriander leaves.....
